Happy Thanksgiving ~ Pumpkin Roll Recipe

We are taking this morning to do some baking and cooking and I thought I would share a pumpkin roll recipe that is a real favorite in our home, sure to impress the family and guests~ I have posted it over on our facebook page in the notes section as well~ but will post it here as well;

Holiday Pumpkin Roll~






FOR THE CAKE:
Powdered Sugar
3/4 cup all - purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1/4 tsp. salt
3 large eggs ( or if using medium, just add one more)
1 cup sugar (granulated, now powder)
2/3 cup Pumpkin
1 cup chopped Walnuts ( optional)

FILLING:
1 pkg of cream cheese ( 8 oz) * Note I double this whole filling recipe for more YUM*
6 tbsp. butter, softened
1 tsp. vanilla
Powdered sugar

Directions:
1.Preheat oven to 375 and Grease a 15x10 inch jelly roll pan ( these are the larger cookie sheets with rims)
2.line the pan with wax paper ( very important because this is what will make it easy peasy to remove from pan)
3.grease and flour the wax paper, sprinkle towel with powdered sugar. ( the towel I use is the no "nap" kind bar towels-which are the best for baking jelly rolls with) they are lintless and very needed when making this.
4.Combine flour, baking powder, baking soda, cinnamon, cloves, and salt in a small bowl.
5.Beat eggs and sugar in large mixer bowl until thick.  Beat in pumpkin.
6. Stir in flour mixture.
7.Spread evenly into pan. sprinkle with nuts.

8. bake 13-15 minutes ( this cooks quick so be sure to check with a toothpick) or until tops springs back when lightly touched.
9. IMMEDIATELY loosen and turn cake onto the prepared towel. (the towel with powdered sugar)
10. Carefully peel off the wax paper.
11. Roll cake and towel together, starting with narrow end.
12. cool on a wire rack

(while cake roll is cooling)

13. beat cream cheese, powdered sugar, butter and vanilla in small mixer bowl until smooth.
14. carefully unroll cake and remove the towel. ( the cake should now be cool when doing this)
15. Spread cream cheese mixture over the cake and re-roll.
16 Wrap in plastic wrap and refrigerate for one hour - or till ready to serve ( sprinkle with powdered sugar when slicing adn serving)

*** sure to impress your in-laws and whole family *** (wink)
